Ripe coffee cherries are selectively picked by hand.
The outer skin of the coffee cherry is removed to expose the pulp or mucilage, which surrounds the coffee bean.
The depulped coffee beans and mucilage ferment in water tanks, naturally broken down by yeast and bacteria.
After fermentation, beans are washed to remove remaining mucilage, usually by water channels or rinsing.
The washed coffee beans are sun-dried on beds, turned regularly to ensure even drying and prevent mold or mildew formation.
After reaching desired moisture, the outer parchment is mechanically removed in a process called hulling to reveal green coffee beans.
Green coffee beans are sorted and graded based on size, density, and quality to remove defects and graded on factors like size, altitude, and appearance.
Arabica coffee beans are indeed renowned for their superior quality and rich flavour profile. It has more pleasing flavours and a smoother aromatic properties that have a sweeter, more complex flavour.
Robusta coffee beans are prized for their strong and intense Flavors profile, making them a favourite among those who prefer a bolder and more robust cup of coffee.
